Chocolate! Chocolate!


I tried a new cookie recipe from one of my cook books the other day that was really easy and really yummy. Mmmm...chocolate.

Here it is:

1 cup (2 sticks) butter or margarine, softened
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa
3/4 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups chocolate chips
1/2 cup coarsely chopped nuts (optional)

1. Heat oven to 350 degrees

2. Beat butter, sugar, eggs and vanilla in large bowl until light and fluffy. Stir together flour, cocoa, baking soda and salt; add to butter mixture, beating until well blended. Stir in chocolate chips and nuts, if desired. Drop by tablespoonfuls onto ungreased cookie sheet.

3. Bake 8-10 minutes or just until set. Cool slightly; remove from cookie sheet to wire rack. Cool completely.

Makes about 3 1/2 dozen cookies.

I baked the cookies for 10 minutes, but I think I'll try 9 minutes next time and I might try white chocolate chips.
